Pearson Ranch has been in the meat snack business since 2000, with the main focus shifting to meat snack products in the summer of 2011. Buffalo (Bison) products were introduced in 2003, and Venison and Wild Boar products added in 2014.
Wild Boar, sometimes called feral swine, were introduced to America by the first European explorers and can now be found in as many as 45 states, primarily in the southern part of the United States. Wild boar is much richer and more exciting in flavor than typical pork, and is also leaner and has a better texture. It is high in iron, niacin, selenium, thiamin, vitamin B6, and zinc, while being low in sodium and cholesterol.
Venison refers only to the meat of deer, and is an incredibly lean meat with a flavor sometimes likened to beef with subtle gamey notes. It is comparable in protein, but lower in calories than most grass-fed beef, lamb, or pork, and tends to have more moisture.
Buffalo, also known as bison, nearly went extinct in the late 19th century, but now there are approximately 200,000 in the United States being raised for meat. Buffalo meat is a deep red color due to the lack of fat marbling, and the taste is slightly sweeter and richer than beef. Buffalo spend their lives on grass, and are not subjected to questionable chemicals or hormones, providing more protein and nutrients with less calories and fat.
Elk is a member of the deer family, bigger than deer and smaller than moose. Elk meat is very lean and finer-grained than beef, described as having a mild, sometimes sweet flavor. It is a great source of protein, high in B-vitamin complex, and free from steroids, hormones or growth antibiotics.
Pearson Ranch Jerky uses only the finest available wild game meats to produce their jerky and meat snacks, which are always USDA approved and have long shelf lives due to their commitment to ensuring the best product. All of their products are low in fat, high in protein, MSG-free, gluten-free, soy-free, and do not have added nitrites.
